Dark Rum is the purest expression of sugarcane byproducts such as molasses used in the production of rum. They are generally aged in oak barrels, through various other styles, like the Demerara style.
Unlike with most spirits, age is not necessarily a factor when it comes to the colour of dark rum. The inky depths are as a result of extended contact with molasses and caramel, which give them that sweet, fat, and heavy character.
Given the thick and delicious nature, dark rum is often served on its own. They can also be used in cocktails, for example, the Mai Tai. Some may be used for cooking and the higher-proofed counterparts may be used to light drinks on fire.
