Sambucas are an Italian class of liqueur with an anise flavouring. Usually colourless in appearance. They range from white varieties to deep blue, otherwise known as black Sambuca, like the Zappa Sambuca Blue, to bright red, also known as red Sambuca, like the Zappa Sambuca Red. They have essential oils flavourings, along with other spices such as liquorice and elderflower.
Pastis, on the other hand, is a French class of liqueur, also with an anise flavouring. It contains the additional flavour of liquorice root. Originally, Pastis production used whole herbs, just like most spirits. In modern versions, however, their preparation is from mixing base alcohol with commercially prepared flavourings and caramel colouring.
