Cognac is a type of brandy named after the Cognac region of France. It is produced by double-distilling white wines from any of the designated growing regions.
For a brandy to qualify as a Cognac, the brandy must be twice distilled in copper pot stills and aged for at least two years in French oak barrels. Only specified grapes may also be used for a Cognac to qualify. One of the most widely used is Ugni Blanc.
Cognac exists in various grades, such as V.S., V.S.O.P., XO and Hors d’ âge.
